Vinaigrette is a sophisticated salad bistro that elevates the concept of a “salad bar” through delicious main course salads. Featuring outlets in Santa Fe, Albuquerque, and now Austin, our expertly dressed gourmet salads offer pioneering blends of flavors. Ranging from the savory All Kale Caesar to the sweet Nutty Pear-fessor, and the well-rounded Salacho taco salad, we offer comfort food that is designed to be healthful, letting you flourish.
Much of the produce for our Santa Fe and Albuquerque branches is cultivated on a 10-acre farm owned by Erin Wade, in Nambe, New Mexico. A farm located in Bastrop; TX is set to support the newly opened Austin restaurant. Emphasizing sustainability, we ensure restaurant food waste is returned to the farm to nourish the livestock and be composted back into the earth to enrich the soil.
Our menu also offers an array of delectable soups and sides, robust sandwiches, and homemade desserts. We complement these with a range of dinner specials and seasonal delights.

My initial impressions of Vinaigrette were that it was neat, contemporary, and stylish. The patio was a delightful surprise with its pet-friendly policy, ample seating, a secluded outdoor ambiance, and the shade of a massive oak tree which was a boon on a hot summer day. Our meal began with black bean and kale nachos garnished with an avocado and cilantro dressing. Despite my initial reservations, as I’m not a black bean enthusiast, the combination of textures and flavors was spot-on. The sweet dressing contrasted the bitterness of the kale effectively, leaving us eager to see how our main dishes would fare. My salad, ‘The Omega’, was huge and I was unsure if I could finish it. What took me by surprise was the even distribution of the ingredients. The dressing was evenly mixed, and the corn, avocado, and peppers weren’t lumped together but dispersed, making every bite a blend of all the elements. The freshness of the produce was commendable, which was not surprising given that Vinaigrette sources its ingredients from a farm in Bastrop. I left feeling satiated, revitalized, and extremely content. If you’re in Austin and seeking a healthy, delicious eatery, Vinaigrette could be the ideal choice.

A blend of finely chopped Napa & red cabbage and rice noodles, complemented with thin strips of red bell peppers, scallions, shredded carrots, cilantro, and peanuts. Tossed in a miso ginger vinaigrette and garnished with crispy noodles.
The Omega
